Every time I come across a new favorite juice or a new juice discovery, I feel like I need to share it so that everyone can experience it too. Which is why I’m sharing this Beta-Carotene Antioxidant Boost recipe today! It’s full of sweet potato, carrot, mango and pineapple, and it just couldn’t be any more delicious.

This juice get’s it’s beautiful color from the beta-carotene in the sweet potato and carrots. The pineapple adds a great anti-inflammatory property to it. Annnd it’s just loaded with vitamin A, vitamin C, antioxidants… the list goes on! This means that it’s great for your skin, for your eyes, and for your immune system. And since you’re drinking these fruits and veggies in their raw state, you get the added benefit of immediate nourishment.

Juicing is the best! But, why would this be a new discovery for me, you ask?

Wellll, I’ve never juiced sweet potatoes before!

I eat them often. I juice often.

I know that sweet potatoes are chock-full of vitamin A and other nutrients, but juicing them is something that has never come to mind.

UNTIL… I tried a smoothie made with sweet potatoes the other day.

I was a bit hesitant to order this sweet potato smoothie at first, but I couldn’t resist it’s name, “24 CARROT GLOW”.

Plus I loved everything inside of it (mango, sweet potato, pineapple, and carrots)… so I decided to give it a go.

After my first sip, it was clear that this fruit and veggie combo is genius!

So, I immediately put my mind to making a juice version of this smoothie…. this Beta-Carotene Antioxidant Boost!

I love this new juice so much! And it’s not only because it is a new delicious and healthy juice to add to my juicing rotation, but it’s also because it satisfied a bread craving that I was having. Anything that does that, is good in my book! 🙂

Beta-Carotene Antioxidant Boost (paleo, GF)

Blended sweet potato, mango, carrots and pineapple for a boost of beta carotene.

Ingredients 

  • 1 medium mango
  • 4 pineapple rounds, one inch thick
  • 1 medium sweet potato
  • 10 small carrots , or 4-5 large ones, (the carrots alone yielded 10 ounces of juice for me)
  • a small slice of lemon

Instructions 

  • Wash and dry the mango, sweet potato, and carrots.
  • Cut the outer peel off of the mango. Slice as much of the meat off the of the mango seed as you can. Cut the sweet potato into smaller pieces.
  • Juice all of the fruit and vegetables in a juicer.
  • Yields 30 ounces of juice.

  1. Hello Dominique, I tried this recipe and it was delicious! SInce I don’t have a juicer, but do have a Vitamix blender, I adapted your recipe. I put the sweet potato slices and baby carrots into a small saucepan with just enough mango juice to cover, brought to a boil, then reduced to simmer until just softened (about 20 minutes). I then let the vegetables cool. To the blender I added the cooked vegetables with some of the juice, pineapple slices and frozen mango chunks (that I had on hand). I also added 2-3 tblsp of goji berries (since I had those on hand too). Added a little more mango juice to help the blending process. Blended until smooth, about 1 minute. Teen and dog tested; both liked! I cooked extra vegetables, so I refrigerated the remaining and will have another smoothie tomorrow.
    I think next time I make this, I’ll try diluting the juice with some water as this smoothie was a little too sweet for my taste. Thanks for a new recipe!
