This cucumber tomato avocado salad is a delicious and simple salad made with fresh veggies, crumbled goat cheese and a mustard balsamic dressing.

This salad has been in my regular salad rotation for years now. Not only is it delicious and flavorful, but also every time that I make it, I am asked for the recipe.

It is full of fresh tomatoes, cucumbers and avocado. I love how easy this salad is to customize as well. You can add whatever veggies you have on hand and you can also add some grilled chicken, hard boiled eggs, or chickpeas for extra protein.

Recipe ingredients

Ingredients needed to make avocado cucumber tomato salad with goat cheese.
  • Cherry tomatoes– any small tomato works, such as San Marzano or various types of cherry tomatoes.
  • Cucumber– I prefer English cucumbers but feel free to us an American cucumber.
  • Avocado– make sure your avocados are ripe.
  • Goat cheese– you can buy it already crumbled or crumble it yourself.
  • Olive oil– use a good quality extra virgin olive oil.
  • Balsamic vinegar– this adds the main flavor to the dressing.
  • Dried basil and oregano– this seasons the dressing and the whole salad.

Additions/ Substitutions

  • You could add diced bell pepper.
  • You could add diced onion.
  • Instead of goat cheese, you can use feta or mozzarella balls.
  • Instead of dried basil and oregano, you can use fresh basil and fresh oregano.

Step by step instructions

Step 1: Slice the tomatoes in half. Slice and quarter the cucumbers. Place both in a large bowl.

Step 2: Make the balsamic dressing by mixing the olive oil, mustard, balsamic vinegar, dried oregano, dried basil, salt and pepper together.

Step 3: Pour some of the dressing on top of the tomatoes and cucumbers and mix.

Step 4: Add diced avocado and crumbled goat cheese and mix.

Cucumber Tomato Avocado and Goat Cheese Salad with Balsamic Dressing

A delicious and easy salad made with fresh veggies, crumbled goat cheese and a mustard balsamic dressing.

Ingredients 

  • 2 cups cherry tomatoes
  • 1 English cucumber, sliced and quartered
  • 2 avocados, diced
  • 2.5 ounces crumbled goat cheese
  • 7 Tablespoons olive oil
  • 4 Tablespoons balsamic vinegar
  • 2 teaspoons dijon mustard
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Instructions 

  • Cut tomatoes in half, slice and quarter cucumbers, and place them in a large bowl.
  • In a small bowl, make the dressing. Add the olive oil, balsamic vinegar, mustard, salt, pepper, dried oregano and dried basil. Mix well until the mixture thickens.
  • Pour about 3/4 of the dressing on top of the tomatoes and cucumbers and mix.
  • Add the diced avocado and crumbled goat cheese on top of the tomatoes and cucumbers. Mix and serve.

Notes

Note: You will have extra dressing. Feel free to use all of it if you like lots of dressing in your salad.
