I’ve got one more cherry recipe that I have been meaning to post while cherries are still in season. And it’s this fluffy and flavorful Cherry and Chocolate Chip Banana Bread recipe. It’s a grain-free / paleo / gluten-free banana bread that is loaded with fresh chopped cherries and chocolate chips, and then it’s topped in a chia-seed and chocolate chip crust. NOM.
It has been a recent favorite at my house, and always disappears within two days!
Really… this Cherry and Chocolate Chip Banana Bread does not make it more than two days in my house!
I’m not sure if it’s the combo of the cherry, chocolate and banana, or the fluffiness, or how easy it is to eat… or maybe a mixture of all three reasons…. but I just can’t stop myself from eating it!
Luckily it’s made with healthier ingredients. 🙂
Such as almond flour, tapioca flour and coconut flour. These flours combined give a really fluffy bread-like texture to this bread.
There’s also apple sauce, honey, and olive oil inside. The apple sauce is used partly as a sweetener and partly to replace some of the oil/ fat in the recipe.
I chose to use olive oil in this recipe because I love using it in baked goods… I prefer using it to coconut oil!
Oh and I almost forgot! There’s mashed banana and fresh cherries inside. Do these count as your daily servings of fruit??
I’d like to think so 🙂
Either way this bread is full of healthier ingredient options than your usual banana bread… there’s no butter or sugar or processed flour inside.
Also, I feel like I need to point this out, the banana flavor here isn’t dominant. To me, the cherry, chocolate and banana flavors all stand out evenly… which I prefer!
Because the cherry and chocolate are such important parts here!!
If you couldn’t tell by my prior few posts, I LOVE cherries and chocolate together. And if you do too, check these recipes out:
Welp, I hope you enjoy this banana bread as much as me!! Happy end of July! 🙂
- 1 cup almond flour
- 1 cup tapioca flour
- 1/3 cup coconut flour ( I like Nutiva Organic for quality and price)
- 1 1/2 teaspoons baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- 3 eggs
- 1/3 cup honey
- 1 tsp vanilla
- 1/3 cup apple sauce
- ¼ cup olive oil
- ½ cup mashed banana ( this was 1 large banana for me)
- 1 cup pitted and quartered cherries ,this was 17 cherries for me
- 1/3 cup enjoy life chocolate chips (I use the Enjoy Life brand because it's dairy-free, nut-free, soy-free and gluten-free)
Preheat the oven to 350 degrees. Line a tin loaf pan with parchment paper. (I used a 10 1/2" x 5 1/4" x 3" metal loaf pan)
In a large bowl, mix the almond flour, tapioca flour, coconut flour, baking soda, salt, and cinnamon with a fork. Set the bowl aside.
In another large bowl, mix the eggs, honey, vanilla, apple sauce and olive oil with an electric hand-held mixer until well mixed. Add the mashed banana to the bowl and mix with the electric mixer until well blended.
Pour the dry ingredients into the wet ingredients and mix with the electric hand-held mixer until thickened and well mixed.
Fold ½ cup of chocolate chips and 1 cup of quartered cherries into the batter.
Pour the batter into the lined loaf pan and then pat the top of the batter with a spoon to make sure it is flat. Sprinkle 1 Tbs of chia seeds and 1 Tbs of chocolate chips on top of the batter and push down lightly with a spoon.
Bake for 40-45 minutes, until the loaf is golden brown and the top has hardened.
Note: my pan was 10 1/2" x 5 1/4" x 3" high. If your pan is smaller or larger, you will need to adjust the time of baking.
