I’ve been meaning to share the recipe for these Strawberry and Matcha Green Tea Popsicles for over a month now! I wanted to share a few cherry recipes while cherries are still in season first, but now that that is out of the way, I could not wait any longer.

Especially since it’s the middle of summer and especially because these are so delicious!

Seriously, these Strawberry and Matcha Green Tea Popsicles are delish! They have alternating layers of fresh pureed strawberries and matcha green tea almond milk latte, and the combo compliments each other so well that you’ll find it hard to just have one!

I recipe tested this recipe a few times and then made my favorite version for a small July 4th get together and they were a big hit!

Luckily these popsicles are super easy to make, so if you love matcha tea as much as I do and you love strawberries, then these dairy-free / clean / paleo are a must for this summer.

If you follow me on Instagram stories… you’ll know what I mean about how much I love matcha tea. I have literally made this Iced Almond Milk Matcha Latte every single day of summer. And I have no intentions of stopping! 🙂

Anyways, to make these Strawberry and Matcha Green Tea Popsicles, you’ll need 16 ounces of fresh strawberries.

But make sure to set aside 3-4 strawberries so that you can slice them and stick them to the side of your popsicle molds. (This makes for a really pretty looking popsicle after everything freezes.)

Then put the rest of your strawberries into a food processor and mix until a nice puree forms.

Next, you have to make your matcha latte!

Mix together 1 tsp of matcha green tea powder with water, honey and almond milk.

( Kiss me Organics is my all time favorite brand of matcha powder… the quality is great and thus it just tastes so good!)

Then, pour a little bit of the strawberry puree into all the popsicle molds, and then add a little bit of the matcha latte. Keep alternating layers until the popsicle molds are full.

Simple enough. 🙂

Lastly, all you have to do is freeze the popsicles for 4 hours and you are done!

These Strawberry and Matcha Green Tea Popsicles will be ready and waiting for you to cool you off while providing lots of vitamins and antioxidants.

Oh and they are less than 40 calories a popsicle.

Ingredients

  1. Cut the tops of the strawberries off with a knife. Set aside 3-4 strawberries. Slice them and stick the slices onto the insides of the popsicle molds.

  2. Blend the rest of the strawberries in a food processor, until it purees. Set aside.

  3. In a medium bowl, mix 1 tsp of matcha powder with 3 Tbs of hot water. Mix until the green tea powder has mixed well into the water.  Add 1 Tbs honey to the water and mix with a fork, until the honey has dissolved into the water. Add 3/4 cup of almond milk and mix.

  4. Pour some puree into molds ( I put 2 Tbs into the molds), then add some of the matcha mixture to the molds, then add more of the puree. Repeat this until the molds are full.

  5. Top each popsicle mold with the popsicle sticks. 

  6. Freeze for at least 4 hours.

Note: I used these Lebice BPA-free popsicle molds.
