This healthy coleslaw recipe is a delicious creamy salad made with shredded cabbage, blueberries, and chia seeds mixed into a homemade mayonnaise dressing. It is the perfect side dish to make for dinner, lunch or a BBQ.

Recipe ingredients

Ingredients needed to make healthy blueberry coleslaw.
  • Coleslaw mix– A 9 ounce bag of coleslaw mix works best for this recipe. I like using a mixture of white cabbage, purple cabbage and shredded carrots.
  • Honey– any kind of honey works here. I like using raw honey.
  • Mustard– dijon mustard is great for the dressing in this recipe.
  • Mayonnaise– use any kind of mayonnaise that works for your dietary needs or tastes.
  • Apple cider vinegar– this adds a good vinegar punch to this dressing.
  • Blueberry– fresh blueberries add a nice crunch here.
  • Chia seeds– these add great texture and healthy omega 3s to the recipe.

Additions/ Substitutions

  • Instead of honey, you can use maple syrup.
  • You can use a Vegan mayo, if you want this recipe to be Vegan. Just omit the honey and use maple syrup as well.
  • You can use Paleo mayo or make your own mayo, if you want this recipe to be Paleo.
  • You can omit the chia seeds if you don’t want this in the recipe.
  • Instead of blueberries, you can use diced apples.

Step 1: Make the dressing by mixing the mayo, mustard, honey, salt, pepper, and apple cider vinegar together.

Healthy Coleslaw with Blueberries and Chia Seeds (Paleo, Dairy-free)

This healthy coleslaw recipe is a delicious creamy salad made with shredded cabbage, blueberries, and chia seeds mixed into a homemade mayonnaise dressing. It is the perfect side dish to make for dinner, lunch or a BBQ.

Ingredients 

  • 6 cups coleslaw mix ( shredded cabbage and carrots), ( I used a 9 ounce coleslaw mix bag)
  • 1/3 cup mayonnaise
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons honey
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper to taste
  • 2 Tablespoons chia seeds
  • 1/2 cup blueberries

Instructions 

  • Put the shredded cabbage and carrots into a large bowl.
  • In another smaller bowl, mix the mayonnaise, apple cider vinegar, honey, dijon mustard, salt and pepper together with a fork. Mix until the dressing is smooth. (note: taste it at this point and add more honey if you want it to be sweeter or more vinegar if you want more of a vinegar taste) 
  • Pour the dressing on top of the shredded cabbage and carrots and mix. Then, put the chia seeds on top and mix. Fold in the blueberries.
  • You can serve this coleslaw immediately ( it will be nice and crunchy). However, if you leave it in the fridge for a few hours- to overnight, all of the flavors seep into the cabbage and the cabbage becomes a bit less crunchy and a bit more flavorful.
