I’d say that I make these Maple Glazed Turmeric Carrots about weekly!

I mean cooked carrots are delicious as is, but add maple syrup and I’m sold. Especially when the recipe is so simple to make.

All you need to do is drizzle some olive oil onto peeled carrots, splash a bit of maple syrup on top of that and then sprinkle everything with turmeric.

Then bake everything in the oven until the carrots are soft and the maple syrup has caramelized.

I originally started making this recipe with only olive oil and Turmeric, but then my sweet tooth kicked in, and I tried adding maple syrup on a whim.

To my pleasant surprise, I realized that the maple syrup crystallized and caramelized in a delicious hardened caramel of sorts, which really kicks these carrots up a notch.

This recipe is a great side-dish that adds a lot of flavor and antioxidants to your meal.

Maple Glazed Turmeric Carrots (Paleo, GF)

Maple and turmeric carrots make an easy and tasty side dish for meals.

Ingredients 

  • 6-8 large carrots, , peeled
  • about 1 Tbs of olive oil
  • 1/8 tsp of salt
  • 1/4 tsp + 1/8 tsp of ground turmeric
  • a sprinkle of ground black pepper
  • 1 Tbs maple syrup

Instructions 

  • Preheat your oven to 400 degrees.
  • Cover a cookie sheet with wax paper.
  • Lay the carrots onto the cookie sheet and sprinkle the olive oil on top. Roll the carrots around in the olive oil so they are fully coated in it.
  • Sprinkle the maple syrup on top of the carrots. Evenly top the carrots with the ground turmeric.
  • Bake in the oven for 35-40 minutes, or until the carrots become gold and soft and you can easily stab them with a knife. If you like your carrots more or less cooked, add more or less time to the cooking.

    LOL, it’s your recipe!!!

    I was shocked I didn’t gain from the maple syrup, so now I use it in coffee — which I have a few times a week. 🙂
