One of the best parts about following a Paleo diet is being able to eat avocado, which means… guacamole! Yum! One of the worst parts, however, would have to be not being able to have chips to dunk into said guacamole. Sighhh.
There are lots of great chip replacements though– apple chips, carrots, red peppers… you could use many fruits and vegetables in the place of chips if you think about it. These are great options because they are healthier than chips and because they don’t make you feel sick if you overeat them. They also all taste great with this Grapefruit Guacamole.
I have been wanting to make grapefruit guacamole for over a year now! I had bookmarked a delicious-looking Grapefruit and Avocado Guacamole Recipe from a cooking blog that I like, A Curvey Carrot and had been meaning to try it out. I adapted the recipe here and it turned out to be really delicious!
The sweetness that the grapefruit brings to the guacamole makes it taste even better with fruit and especially with apple chips.
These Bare Fruit apple chips are AMAZING. The only ingredient inside of them is apples and their crispy texture makes them perfect to use for dipping. I bought them at Costco.
Of course carrots and red pepper taste great with this Grapefruit Guacamole. I even ended up putting some on eggs later… so good!I know that I am biased towards anything grapefruit, but I do have to say that it was a great addition to guacamole! The tangy lime worked alongside the sweet grapefruit, adding the most refreshing juice to the avocado. The cayenne pepper added a warm spice, while the garlic, onion, and cilantro gave each bite a natural kick. It was delightful!
- 2 avocados
- ¾ of a large grapefruit
- 3 tbs of minced red onion
- 1 tbs minced garlic
- 1 tbs minced cilantro
- ¾ tsp of salt
- 2 tbs lime juice
- ½ tsp cayenne pepper
- 1 tomato chopped up (6 tbs)
- Put the inside of two avocados into a large bowl.
- Add the lime juice and mix everything together.
- Peel the grapefruit and remove the skin surrounding each section. Put the pink part of the grapefruit into the bowl.
- Add the garlic, onion, cilantro, salt, cayenne pepper and chopped tomato to the bowl and mix with a fork until you have the desired consistency and flavor that you want.
